Worth mentioning, this is a great gift to pre-make for a friend who had a baby, as it makes a wonderful nourishment for her postpartum recovery, plus helps the family in those early days not having to think about dinner - they will love you for it.

 

 

How to Make Bone Broth Soup that is simple and delicious

Ingredients:

500ml slow cooked organic bone broth
500g organic chicken thigh
🥬 ½ cup chopped celery
🥕 ½ cup chopped carrots
🎃 Pumpkin (we normally use 1/2-1 whole pumpkin)
🥦 Broccoli (but only the heads - makes it much easier on the tummy)
🥬 Book choy/Zucchini
2-3cm Fresh Ginger (if kids eating it I leave it in bigger chunks, so you can take it out from their plates - as they might find it a lil zingy for them if they bite into it or chop it super teeny tiny)
🍃 4-5 Kefir Lime leaves (this is the secret ingredient)

Method:

1️⃣ Place your chicken with the broth and ginger + seasonings in a large soup pot or slow cooker, while you chop up the veggies.

2️⃣ Fill the slow cooker or pot with all the veggies to the top (leave about 3cm from the top)

3️⃣ Then add water until it covers it all about 3cm from the top and cover with a lid.

4️⃣ If cooking over the stove, bring the pot to a boil over medium high-heat, reduce the heat, and let simmer between 12-24 hours. If cooking in a slow cooker, set it to LOW and let cook for 12-24 hours. if you are like, that is a long time, you can buy slow cooked broth pre-made (our fave brand is Good Bones, you can these days find it at Woolworths) and cook it for 3-4 hours with the pre-made slow cooked broth, and it's just as delicious and the chicken still super tender. 

One thing to note: if you or anyone you are cooking for suffer from high histamine (they suffer from hay fever or allergies etc) you want to cook it for less, the longer you cook the more histamine will be released. My son suffer from high histamine so I cook mine these days for 3-4 hours. Super delicious still and nutritious.

5️⃣ Once cooked, let it cool, and store in glass containers in the fridge for up to 5 days or in the freezer for up to 6 months.
